Mock Potato Salad

1 large head cauliflower
celery, chopped
green onions, chopped
radishes, thinly sliced
1 can artichoke hearts, chopped
2 or 3 avocados chopped into small pieces
whole celery seed to taste

Pulse chop the cauliflower into small pieces, or use a knife and cut into very small pieces. Add chopped celery, chopped green onions, sliced radishes, chopped artichoke hearts and/or chopped palm hearts and/or chopped dill pickle, chopped avocado. Mix in the following dressing.

This salad is delicious if allowed to sit overnight. Enjoy!

1 ¼ C. water
1 ½ C. cashews
1 lemon – juiced (3-4 Tbsp.)
1 tsp. onion powder
¼ – ½ tsp. turmeric
dash cayenne
1 tsp. salt
1 Tbsp. scant honey

Blend well and adjust taste to be tangy/sweet. Stir into “Mock Potato Salad”
