October Apple Salad
1 C. cashews
1 C. water
Soak cashews in water overnight.
½ C. finely chopped dates
1 C. chopped oranges
1 C. chopped pineapple
2 C. fine grated apples
1-3 tsp. psyllium husk
Combine oranges, dates, pineapple and apples in a bowl and mix. Sprinkle psyllium over fruit and mix well. Form into a loaf on a platter and refrigerate overnight.
Next day, blend cashews and soak water with:
1 Tbsp. Honey
pinch of salt
Blend until as smooth as cream, then add 1-3 tsp. psyllium husk. Let stand a few minutes then spread evenly over the fruit loaf. Garnish with parsley and thin slices of carrot if desired.
*Note: If juice seeps down around the loaf, drain off, stir in a sprinkle of psyllium husk and pour back over the loaf. Allow to sit a few minutes before “frosting with the cashew cream.
