Corn Butter

1/4 cup cold water
1 cup boiling water
1 cup unsalted, hot, corn meal mush
1/4 cup cashews
1 1/2 tsp sea salt
2 tsp lemon juice
small piece of carrot for color (opt)

Refrigerate until set (usually overnight)
