Fun Leeks

1 1/2 cups leeks, thinly slices
1 Tbs olive oil
1 Tbs tamari
1 tsp honey
1 Tbs fresh lemon juice

Rinse the sliced leeks (dirt like to hide in the leeks, so make sure you wash them really well).
Whisk together the remaining ingredients in a bowl.  Add in the sliced leeks and toss to thoroughly coat.
Let these marinate for about 20 minutes (after 10 minutes, stir to ensure even coverage).

Transfer them to a dehydrator tray (shaking off any excess oil over the bowl beforehand) and dehydrate at 105 F until crispy.
